Made some elk jerky today and if I do say so myself it's the best jerky I've ever had ;). Normally, I buy the pre-sliced beef and do this but of course I have a lot of elk in the freezer now so I am doing my first batch from trimmings.
Share your best recipes for your jerky!
Mine: I start with a simple McCormicks marinade, Peppercorn & Garlic. I order is by the case off amazon. Follow the instructions to the tee. I add about 2 tablespoons of black pepper to the marinade.
If you want to add some spice I add Tones 6 pepper seasoning. Absolutely delicious!!!
Dehydrate the appropriate amount of time in your region and you will have some jerky that is SUPER simple to make and is absolutely guaranteed to get compliments!

Get yourself some roasted hatch hot green chile and puree it in your blender. Add some garlic, salt, course black pepper, and your favorite marinade. Put it in a gallon zip lock bag, add the meat, mix it up and leave it on the fridge a full day to soak up all the goodness. I usually add more black pepper when I lay them out on the dehydrator.
