whats the difference between 1000, 2000, 3000 limbs
Length mainly. The 2000 and 3000 are the same limbs, just different length(3000 being longer).
I believe the XT 1000 limbs are not laminated.
Target guys use mainly the XT 3000 limbs. Hunters and 3D guys like the XT 2000 limbs for increased speed. The XT 1000 limbs are much cheaper and are found on the lower priced Hoyts.
Thanks always wanted to know.
From my understanding, all of the XT limbs are laminated. I believe the lower priced non-laminated limbs on some of the cheaper Hoyts are the ZR limbs.
The high end 3000 and 3500 Pro limbs are matched for target shooting.

XT1000 Hoyts 13" XT1000 limb uses their five layer lamination design and 3/4" split limb technology to give you a shorter axle to axle bow.
XT2000 The most popular of Hoyt's limbs, the 14" limb gives a good axle length and bracing height without compromising the speed
XT3000 At 15 1/2", the XT3000 gives you a longer axle length and bigger bracing height for increased stability. Good for finger shooters or release shooters wanting the extra comfort.
XT4000 The replacement for the LX Pro limb, at 17" in length and with the recurve design, this limb will give you an exceptional long forgiving bow.
Yup, I just realised I was wrong about the 1000's not being laminated and came back to change my statement, but I see I've been corrected. Thanks, that'll teach me to post so late at night, huh.
GET on the HOYT website and then GET Serious get Hoyt
Also lets say I want to get now limb's (XT 2000), Do I just call the dealer and get them coming or is there a rated deflection for each bow make?
You will want to know the limb deflection for your bow so you know what draw weight you are trying to achieve.
