I polish them with Japanese wetstones and finish with a leather strop.
Last step makes them hair popping sharp.

Stopping goes to another level of sharpness if you grind some good stripping compound into the leather first. Get yourself a leather strop on block and herb's Yellowstone stripping compound from 3rivers archery.
