My least favorite of all thus far is caribou. I think I just had some poorly processed and handled meat. It tasted like the smell of stale pee (not kidding), it was horrible the only time I had it, and I'm jaded now :)

All African game was exceptional. Caribou was also fantastic, but those were prepared by a chef.

I'm not a big elk or mule deer fan although those two are the most frequent we get.

Mountain Lion and Wild hog are up at the top too.

Tndeer, I'm not grizzled at all, just feeling giddy as usual during bow-season. Come to think of it I probably am grizzled the rest of the year though. Guess I could have suggested Bison Balls Tartare'. No really I've never tried that. My very favorite game happens to be BBQ'd squirrel. Not fox but gray. And yes squirrels are probably the only thing other than prairie dogs and snakes that I shoot with a gun. My favorite venison other than heart is pickled venison. I'll post the recipe one day soon.

In my experience for dark meat it would be tough to beat bison. For white meat quail, no doubt.

1. Stone sheep tenderloin dusted with terriaki powder and cooked on a stick over an alder fire. With a side of Mac & cheese that was and always will be the best meal I will ever eat. Been to a bunch of 5 star restaraunts and they are no match.

2. Stone sheep ribs over a similar alder fire-so good I was actually licking my fingers to get every last molecule.

3. Black Bear pot roast from a Michigan fall bear.

4. Kodiak Island Sitka Blacktail liver.

Not a big fan of mountain lion each of the 3 times I tried it. Big fan of everything else but those stand out in my mind.

Pronghorn- If cleaned immediately and cooled down. Hands down the best meat of all big game.

Mt. Goat- the tenderloins were amazing. Rest of meat tough but delicious.

Elk- Always great...

Mt. Lion- Tasted like a sweet pork..

Mule Deer- Always great...

all are some of the best meat I have ever eaten...

I've heard a lot of folks say moose.

I have never killed a moose, yet, but I have eaten some and it doesn't compare to fresh elk tenderloin properly taken care of in the field and grilled medium with Tastefully Simple's Onion/Onion & Garlic/Garlic. I just ate some and I wish I'd thawed more.

Even though I enjoy all game meat, I reckon you can't go past any birds for taste and tenderness. Best birds I have eaten would be ostrich closely followed by emu.

Bighorn tastes like lamb and it gets extras flavor cause youare eating bighorn.

Mt goat was good..a little tough but great flavor

I will be hunting Oryx in a few weeks and everyone swears hands down it is the best...

Bison and moose tossup, Elk extremely close second , all are top rate. I have heard wild boar is really great but never tasted it. Deer depends a lot on what they are feeding on and age of animal.

For deer, there are lots tied for second, but nothing else comes close to Axis.

My wife doesn't "hunt" but she will go shoot an axis if we get low. She says it is like grocery shopping to her.

Depends on lots of factors: age, what it's been eating, whether the critter was assasinated or run, how well and quickly the meat was dressed and cooled, how old the freezer meat is. I've had fabulous raghorn elk tenders (went through about 5 lbs as I recall), REALLY young whitetail feeding on pasture hay, pig feeding on acorns, excellent antelope for its veal texture, fresh rattlesnake (gotta get a fat one though). Dry doe is better than old male - you don't eat antlers. Nothing overcooked, so you have to play the freezer game to make sure any possible parasites are froze out. I am regularly impressed by how good almost everything tastes.
