I'm looking for a meat cooler mainly and haven't come up with anything by way of google searches. Also, looking for a good grocery store that we could stock up on maybe part way through the trip. We were thinking it might be better to make a food run halfway through, rather than trying to take that much food with us. Also, trying to search on the internet for a Safeway or Albertsons has yielded nothing.
Any thoughts on other logistical things that maybe I haven't thought of would be most appreciated.

I've never hunted in Wyoming, but I've hunted the Idaho side from Star Valley extensively. I've heard good things about the WY side.

Also in Alpine at the Grey's River Tavern, which also has a small trailer court, you can pay $8 to get a nice hot shower.
Across the street is the Yankee Doodle Café which is great little place to eat. A few doors down is a gift shop where your wife can ship the stuff you need for camp and forgot.... such as my angle kit for my wall tent frame, Doh! haha
Down from there is the Bull Moose Saloon for a beer and a steak etc. In Afton the Cowboy Bar is a cool place to stop. Maybe take a picture of the archway in the middle of town.
By the way.... there are no elk for miles and miles anywhere near that area. There used to be a few bulls around but they killed them all to make the arch. lol ;-)
Dana's Cold Storage is on the west side of the canal in Thayne; it doesn't have highway frontage. Cal seems to me to be a pretty stand up guy.

There are states that have limits on what you can bring in, however. That has to do with CWD. They generally require all brain and spinal tissues to be removed. Maybe that's what you're thinking about?

But Mossyhorn I'm pretty sure that isn't 100% accurate. I believe the keyword is brain tissue. If you take the time to remove the brains you should be good to go. Take a good bone saw and saw just the very rear of the round part of the skull so you can get into the brain cavity and scoop it out.
Myself I also make sure they see that I made the effort to comply with the laws. I also remove the lower jaw, eyeballs etc AND stop at a coin operated car wash and blast the heck out of the inside of the brain cavity to make sure I didn't miss anything.
The only other thing you could possibly do which would make it the same as any euro would be to boil it which isn't very reasonable.
I suppose you could use some bleach on it as well. That would smell enough that I'd think any CO would see that you did your part and not give you a hard time.
I would also suggest not using the hero method of shipping and instead of lashing the skull on your vehicle somewhere for the whole world to see get it inside the truck bed. Out of sight out of mind would probably be a really good idea to avoid any conflicts in the first place right.
(a) No deer, elk or moose taken or possessed from any hunt area shall be transported to any other hunt area within Wyoming or to any other state, province or country except as provided in this section. (b) Deer, elk and moose carcasses harvested from any hunt area in Wyoming may be transported within Wyoming to a camp, a private residence for processing, a taxidermist, a processor, or a CWD sample collection site in Wyoming, provided the head and all portions of the spinal column remain at the site of the kill or such parts are disposed of in any approved landfill in Wyoming. (c) Except as provided in subsection (b) of this section, only the following parts of any deer, elk or moose harvested from any hunt area in Wyoming may be transported to any other hunt area in Wyoming: edible portions with no part of the spinal column or head attached; cleaned hide without the head; skull plate or antlers that have been cleaned of all meat and brain tissue; teeth; or finished taxidermy mounts. (d) Only the following parts of any deer, elk or moose harvested from any hunt areas in Wyoming may be transported to other states, provinces or countries: edible portions with no part of the spinal column or head attached; cleaned hide without the head; skull plate or antlers that have been cleaned of all meat and brain tissue; teeth; or finished taxidermy mounts. Whole deer, elk and moose carcasses harvested from any area shall not be transported out of Wyoming.
