Yeah, they know the season dates.
Want proof? Do a hike in the CO flat tops in June/July and observe the elk. You will literally see hipsters riding the elk.
Then do the same in Sept. 10s of thousands of elk seemingly disappear.

No chance of that. They always show up the second week of November and into December chasing Tail. 5 years ago I counted 13 different bucks out back of the house during the rut. A couple bigger than this guy. Never saw any during hunting season.

I spend countless hours glassing and placing cameras trying to find out where the big mulies hang out from June through Sept.
They are amazing at disappearing.
