Step 1:

Kill a deer.

Skin deer.

Make meat.

Trim off the white crap and cut into strips.

Stick it in some salt water for a few hours.

Dry off.

Throw in a bag with the cure and seasonings you bought at the Cabelas.

Shake the living poop out of it.

Stick it in the fridge until you get home from work the next day.

Step 10:

Stick it on a cookie cooler rack and sprinkle peppercorns on it that you ground with your mortar and pestle. Stick in the oven and twist the knob til it says 200. Stick a wad of aluminum foil in the door to let the good smell and steam out. Go to bed at midnight.

Get up at 6 to go to work and fetch it out of the oven, if you were able to sleep.

Anyone have a good marinate recipe- sweet with a little bit of spicy- I'm not a big Worcestershire or soy sauce guy

I used the High Mountain Sweet and Spicy mix of cure and spices. It's pretty good and probably cheaper than buying all the other ingredients and mixing them- unless you already have them. It has sodium nitrate or sodium nitrite for a preservative if you plan on keeping the stuff around a while.

I started a thread on jerky recipes a month or so ago. Bought some High Country non-msg classic recipe based on the recommendations and was very happy with the results. Polished off that jerked deer hindquarter in no time at all. If I get a big boy in AZ I may dedicate more meat to the cause.

Oh! I thought this was going to be a DIY jerky topic but I see you had help. Very disappointing. Looks great. I've got a big desire to make pastrami out of some game. Have you ever tried making that?

Haven't tried pastromi yet, but my boss brought me some that had jalapeƱos in it that was incredible. May be trying that next.
