I went to colorado this year and we killed 3 lions in 7 days and every one was very good eating infact I have some for lunch today at work!!! Here is a picture of dads cat "Archery" and my buddys daughter "gun"

B2K is correct. Like lean pork. Lion... it's the other white meat.
If I gave you a lion chop you would not know the difference other than it may seem a bit dry. But pork can be too especially if it's lean or overcooked.
I once ate roasted loin from an African lion that a guy brought to a fishing camp I guided at. It was excellent.

Lean and a bit chewy, but tastes like pork. Chicken fried was my favorite way to eat it.
I wish I could shoot one to find out!
