New Mexico Game Processor

I will post this up on the State Forum as well but I was hoping that I might get a little help here first. My buddy and I are driving from Texas to New Mexico in September for an early season elk hunt. It is a 2 week season and we each have a tag. Our plan is to do our best to get an elk down early and then use a processor to butcher it. Then, we want to be able to take our time in harvesting the second elk which we will cut up once we get home. We will be hunting near Pecos. Martinez & Sons in Las Vegas has shut down. Any recommendations on a good processor that's not too far away?

I like Eagle Rock Meats here in ABQ, but it would be a little drive for you.

Maybe someone will post a source in Santa Fe?
