I'm not sure that the size of dewlap is a sign of dominance. In Alaska, I was told the opposite. Most older bulls have small dewlaps. Supposedly, they get frozen and fall off. At -40F, it is hard to keep the dewlap from freezing.

Here's one I saw just this morning, just got a quick shot at it, but the bell didn't fall off. Ha Ha
