an old food warmer that still works with some adaptation....
add some of this from the aforementioned bowkilled critter...
add some sassafras and cherry wood chips at 150 deg. for about an hour.....

Came out ok.... some is a bit dry but the taste is incredible!
I used a 2 burner stove to smoke at 150 deg for 1 hour. Then I turned the stove off and the warmer on at 180 deg for 3 hr. I was already at work by the 3rd hour so actually I may have over dried it too fast. The half I did in the dehydrator is very good too!
I need to open up the bottom of the smoker more, to provide more airflow I believe. Either way this stuff wont be around here for long as much of it is being sent to Miami to remind 2 children of their homeland ~(8o)

I settled for butterfly steaks in golden mushroom soup tonight. Although I say "settled" there were no complaints here from me or Amy. It was good eating.For some reason, we both thought this was the best we had all year.
My commercial made jerky is usually top notch, and that is one reason I continue to allow them to make it for me, but this year's was also a bit on the dry side, but the flavor is outstanding.
