Best jerky recipe I use (below - I usually double for a pound of raw meat), slice the meat 1/4" thick while still partially frozen. Marinate overnight, dehydrate for 4-6 hours until not quite done, turn off and leave in dehydrator for an hour, that will finish it to done.
1/4 cup bourbon, 2 tsp liquid smoke, 1/4 tsp prague powder #1 (curing salt), 1 tbsp molasses, 2 tbsp brown sugar, 1 tsp cracked black pepper, 2 tbsp soy sauce, 2 tbsp Worcestershire sauce, 2 tbsp franks red hot (or more if you like)

O boy rich don't let my son see this thread. He will hunt you down for that jerky. Lol. It reminds me of the time I caught him in the middle of the night on the counter sneaking the jerky you made. I asked him what are you doing and he replied with a simple "just getting some jerky daddy". I couldn't yell at him if I tried. It was done well and you should be proud of your batches.
