For years I have been trying to get my jerky right - often times over doing the drying time in the dehydrator.

Eventually I want to learn how to smoke the jerky but for now I have been using an LEM Dehydrator with stainless racks.

Here was my recipe this time - I placed it in the dehydrator for 7 hours - sliced the meat about a quarter inch thick - 120 degrees

This was the recipe for the marinade - adjust cayenne as you want for heat:

Standard - 7 pounds meat This batch actual - 6.75 pounds yielded 2.75 jerky

2 cups soy 2 cups worsteshire 1 cup red wine .25 cup lemon juice (or substitute .5 pineapple juice) 1 tbsp smoke 4 tbsp brown sugar 2 tbsp black pepper 2 tbsp onion powder 1 tbsp cayenne

Best jerky recipe I use (below - I usually double for a pound of raw meat), slice the meat 1/4" thick while still partially frozen. Marinate overnight, dehydrate for 4-6 hours until not quite done, turn off and leave in dehydrator for an hour, that will finish it to done.

1/4 cup bourbon, 2 tsp liquid smoke, 1/4 tsp prague powder #1 (curing salt), 1 tbsp molasses, 2 tbsp brown sugar, 1 tsp cracked black pepper, 2 tbsp soy sauce, 2 tbsp Worcestershire sauce, 2 tbsp franks red hot (or more if you like)

I like your recipe bird man will need to try it - Shawnm if you pm your address I will send you some from the next batch - I give away 95 percent of my deer meat and jerky. (My wife does not want any and so I limit my consumption LoL)

O boy rich don't let my son see this thread. He will hunt you down for that jerky. Lol. It reminds me of the time I caught him in the middle of the night on the counter sneaking the jerky you made. I asked him what are you doing and he replied with a simple "just getting some jerky daddy". I couldn't yell at him if I tried. It was done well and you should be proud of your batches. Keep up the good work rich!!
