Just made some snack sticks and summer sausage. Used the Hi-Mountain seasoning kit but added Aleppo red pepper to the sticks and sliced jalapeƱos to the sausage. Didn't have and cheddar for the sausage!! Threw them on the smoker to an internal temp of 155 then in an ice bath to cool down. Made 3 lbs of the sticks 2 days ago and they are almost gone and the sausage was completed at noon today Any body else been putting veni on the smoker this summer ?
