Good places for deer sausage?
It's been a while since paid to have a butcher make deer sausage. Any suggestions around Hartford, Manchester, Stafford? I live in the NE part of CT but I work in Hartford. Thanks.

East Fishkill is awesome, as is Adolfs. Not sure on " A Country Butcher" for sausage, though they do make good kielbasa and Pastrami

I just dropped off some venison yesterday at Adolf's. Had their keilbasa in the past and it is awesome. They had me try a snack stick and sent me home with some hot dogs. All delicious, no after bite. The butchery in East Windsor also makes a great product.
Awesome. Just called and I'm going to try Adolphs. I don't have time to make sausage any more but we love eating it!
Heres a good tip 4 u & the reason I dont let anyone touch my meat... Tell not to mix ur meat with other gut shot deer or deer with the piss sack smeared all over it or aging in a barn for a week in this warm weather & mice pissin on it ...lol. Or maybe not...lol. My buddy tells him that he wants only his done NOT MIXED WITH OTHERS... & they say yes they will do it if hes getting 50# or more.
Adolf’s will let you sample pretty much everything. Go there with an empty stomach.

I know Emmitt.. I worked at butchers they do 100# runs. I would do about 10 or 20 on the side each year & the Crap people would bring was gross... Nothing some garlic cant fix...lol...
Get a grinder and make your own. Mine comes out way better then any of the processors I've used.
Got a Hobart 2 stage Dan just need a deer to put in it...lol

I've been doing my own for 20 years. That's why I'm ready to move on and have someone else do it. Besides the time consuming aspect and the mess you make - It's getting harder and harder to find quality pork fat. I used to get it from a butcher in Tolland, but the last time I bought it they charged me 3/lb just for the fat. Screw that.
Pat, this is a little out of your way but believe me, it's worth the drive.

Venison Hotdogs from East Fishkill are epic!
20 years ago when my dad was still alive a bunch of us would pool our meat and go there with hundreds of pounds of boned venison for pretty much everything they offer. We had a combined bill one year for several thousand dollars.

What was I thinking when I posted that?? I'm usually on top of my game, but not this time. I say we send all of our venison to Dan and have him make us sausage.
East Fishkill for hotdogs, hands down. I tried their keilbasa last year, and although it was good, it was a bit dry for me, but good.

I dropped my deer off at Adolphs and he loaded me up with samples. I have a feeling I'm going to start killing more deer! Incredible sausage!
Update. I picked up my batch yesterday. I dropped off 45lbs and received 90lbs back. I got Hot dogs, Kielbasa, and Brats. All were fantastic.
Just one heads up. They don't wrap anything. So I spent three hours last night with my vacuum sealer. Not really a problem for me since it allowed me to package it up exactly the way I wanted. But it's an additional step so be prepared if you use them.
I can't believe how much I got back. Usually you drop off a deer and you get far less than expected. Not in this case. And it was delicious.
Does adolph's have a website?
