He makes an excellent point about how difficult it is to use the shoulder- I agree - the meat cuts are thin and close to the bone -

Check out the thread called "Sous Vide" on the main page.

I bet it would work out great on a shoulder, it can't overcook and it tenderizes like you cannot believe. You will want to cook all your game this way.

Thanks for the idea! Ground venison can get boring on a weekly basis. Make sure you never get bored with venison. If that happens you better find a new hobby!

I'm making Barbacoa in the morning. It's absolutely amazing if you like tacos/burritos. I use a Dutch oven in my oven and cook it all day. All the connective tissue just breaks down. Similar to how I do shanks. It makes a really rich dish.

the roasting pan is about $14 bucks on Amazon - I could barley fit a small shoulder though
