Will, I do my thighs and drumsticks that way for tacos. I either smoke, bread and fry, or marinade and grill the breast. I also do my geese that way if I'm not smoking the breast. It's all good when done right.

Some brined bluefish filets heading on now. Will be doing some summer sausage and slim Jim’s this weekend to try and use up last years stock of venison. I also have 3 roasts left that I am going to do a pastrami with.
