I have made venison bacon from Curley's. Top notch flavor. A couple of suggestions. I would also add Curleys "Flavor Enhancer". (It is primarily MSG, but it makes everything taste better) As far as wood, I like apple wood.

I’ve made this a couple of times. Yeah it’s good but calling it bacon seems a little ridiculous

Most of the people i serve it too relate it to Spam but i personally like it. Keeps in a freezer for years. It doesn't matter what you call it, its good. Pigs were put on this earth for mixing with venison.

Good stuff for sure but more ham than bacon to me. Key is to fry it quick just enough to warm it back up. Cook it like regular bacon and it turns to dried out burger.
