Was wondering what Bison ribs taste like. Are they waxy like venison? Or should I just use meat for jerky?

The day after Thanksgiving, I Smoked these bison short ribs from the one I shot. Turned out awesome and so much better than venison ribs. Next one I will try canning the rib meat to see how that is.

When prepared properly, they are delicious. Better than beef or pork.

For thirty years my friend donated one of his American Bison every year to the annual church Buffalo Barbecue Picnic. He also owned a meat processing business and would process the entire Buffalo into eight to ten pound roasts. He would smoke the roast for the picnic and the ladies would run them threw a meat slicer, think Arbys roast beef, and fill your plate as high as you wanted. No bad parts on a buffalo. Good Day
