Maybe look in Glenwood or down valley towards Rifle.
I have no experience with processors and typically cut up all my animals myself.
There are a few good ones over in the Denver area and down in Grand Junction that do a good job.

Kim Antonelli is the best there is. He's down in Silt, about 45min - an hour west of Basalt. Holy Cow packing plant is how you can find him. He gets real busy real fast during the fall, but worth it. http://www.holycowpp.com/
