Easy answer for me but not very exotic.
Our second season starts here in PA on December 26th every year and runs through the end of January where I hunt. It's bow or flintlock and I have trouble deciding which weapon to take. I enjoy hunting with them both so much. Sometimes snow, sometimes brutal cold but always a blast and a freezer pleaser.
My season will be cut short this year as I get my torn rotator cuff repaired on January 11th. I'll hunt until then and have a good time!
Looking forward to hearing everyone else's January hunts.

Late season deer on my farm. However, for something different my son and I are going to try Nilgai on the King Ranch in January.
Varmint hunting at buddy’s place in Oklahoma.
Wild hogs in the San Gabriel River bottom or red squirrels at Granger Wildlife Management Area with the kids.
Arizona deer and Javelina
Since I'm not a destination hunter, I'll go with rabbit hunting. But most likely I'll be ice fishing instead, hunting for big fish.

Coues, but I’ll miss this year to chase a Lord Derby Eland instead!

Yep, 9 years in Arizona hunting Coues deer in January. Killed 6 on public lands. Fun hunt but can be cold and snowy sometimes and others, 60 degrees, at 6000 ft where i hunt.
Ducks, for a while bowhunting took a back seat to it even in early November, but this year I evened it back out again. Might set a few more times for whitetails, but as of today Missouri’s south zone is opened for ducks so that’s where I’ll usually be
I think I need to put a GPS tracker on Paul’s truck. (for his own safety, of course)
A few years ago my new favourite was southern Arizona, but Covid screwed that over good. Hoping to maybe get back there again sometime after Christmas. Pretty extreme change from Northern BC.

Good populations of yotees in ND … and a few rats, if you’re in to flushing them out.
i hunt chukar and quail through the beginning of the new year. it's my favorite hunt, even surpassing bowhunting. i enjoy the dogs, remote country, and solitude.
Bowhunting in Maryland, especially if it snows. I love to hunt in the snow. Blood trailing is so much easier for this old man.

I thought there must be Bearman but you didn't mention calling yotes there.

We like to get out of the snow & cold & go chase hogs in Ok for a few days in Feb or March.. Used to be Tx but gas made us change that
I hunt Louisiana and Mississippi in January. Our rut where we are usually peaks around the first week of January
I’ll take Mexico Coues deer. Hard to beat IMO.
