Mexico totally took my verizon away. The 7 of us did really well. I shot 4 but lost one when blood petered out. Shot this last one last night when the pigs came up from the Rio Grand but there was one glitch.

Shot 3 with bow 1 with rifle. We have two 150 qt. Coolers and one 100 qt cooler filled with pork. Driving home. Just left Sanib.

All in italian sausage. Grill and put in red sauce with cayenne using maranzano tomatoes. Reduced over low heat by half served on fresh toasted hard rolls with melted cheese hot peppers and raw onions.

Also you have to add 20 to 30 percent fat since wild pork is so lean.

Nice job Pete. I wentthru that drive thru liquor store when I hunted in Sabinal back in 2005. I need to book with Fairchase since I want to get a javi. I just made 65lbs of Italian sausage with the two boars I shot in florida and the hardest part is getting the pork fat to make them. Here on Long Island nobody sells the fat on a consistent basis.
