Gator slow cook recipes

Any good recipes? Lots of gator tough, but tasty, meat left might try something new.

Anyone? I tired it really quick with just meat and some crushed tomatoes. The meat got really tender but it was just ok because I had so little even on low it got to hot a burned sauce a little. my "success" made me think this could be a great way to cook the yummy, but tough, gator meat.
