Shot my first bear a few months back and have eaten several roasts from it but am undecided about what to do with the trim meat. Am considering ring sausage or maybe summer sausage but am open to hear what others do. Thoughts?

Bear meat is similar to pork so any type of sausage will work. I’ve made a lot of green chili/cheddar brats, summer sausage, snack sticks, smoked polish, salami, bologna, jalapeño/cheddar brats. Italian, chorizo, etc. all are good.

Grind it 100% lean with no pork or beef mixed in. Good stuff, just cook it well done.

I made up a bunch of brats and canned them in pint jars...mmmmmmmmmmmmmmm!!!!!!!!!!!!!!!!!!!!

All of our ground meat ended up being reserved for tacos. Not sure why but they were always great.

Kurt x2. I don't care for brats or sausage - too much fat for me. We trim all fat off, and grind the entire thing (except for a couple of roasts). Then we use the ground meat (which tastes great) for all the things you would use ground burger meat. Tacos, meat loaf, pasta sauce, burritos, hamburgers - it's all good!

burger in sloppy Joes, Spaghetti sauce, Goulash, Tacos & so on.. Even people who say they would never eat wild game have consumed these dishes at my home & never knew..

We had bear hamburgers last night on the grill and my son had a left over for breakfast today. I echo Elite 1 - my butcher added about 20% lean beef to raise the quality of the ground bear. Very good straight up as a burger and no distinct taste when used for tacos or sloppy joes.

When we have bear burger in the freezer, we'll save the beef for spaghetti and chili!! Properly cared for bear is absolutely delicious for burgers.
