Can someone please post up some elk pastrami recipes?

Brine; 4 qts of water, 1cup of salt, 1.5 tsp of pink salt, 1 cup of brown sugar, 2 table spoons of pickling spice. Brine the roasts for 5 day or so. Take the roasts out, rinse off. Dry, bring to room temp. Cover with black peper and ground coriander. Smoke it at 200ish till it internal temp is 150.

Doenst matter how many pound...use whole split roasts, bottoms, eye round, the back end of a top. Just make enough brine to cover it...I leave mine outside If it's cold enough otherwise put it in the fridge
