I am using a jerky gun for the first time this weekend (Deer and elk). How course do you grind the venison for jerky?

Same as burger. It glues itself together pretty well.

I just grind one time coarse

Yup. Same here. Once I grind and mix in the cure and other flavorings/spices, I like to let it sit overnight in the fridge.

Yep, grind it coarse one time. So much better using a jerky gun than slicing.

I have lem, think it holds about 1.5 pounds. I should have bought the three pound gun. I grind the meat once, mix the seasoning then I run it though plateless with a tube stuffer right into the gun. Works slick and the grinder is already dirty..
