The box and instructions say max 8 GB but there is a paper inside the camera that says max 32 GB SD card. I am putting the camera in a place that I cannot get to often and would like to use the max card size. Is it fair to say that if 32 GB card appears to work at my house then it should be fine to deploy long term?

I have a variety of cards in mine, 8, 12, 24......they all work...don't see why the 32 would not work in the field if it works now

It should work fine. I use class 10 cards. Not that I think it makes any difference at all.

Some of those newer cams can use up to a 64gb cards. I use 32's and 16's in mine. If you're going to leave the cam out for a long time....I would recommend using Energizer lithiums and/or an external battery pack.
