I have used his jerky recipes and they've all worked out well. He gets a little exotic on some of his ingredients but you can substitute more readily available peppers, etc.

I've made Hank's recipe I attached. I sliced the venison roast against the grain. This recipe is so good a large portion was eaten straight off the smoker.
