Tried your brine recipe on gobbler breasts.Smoked 1 1/2 hours 275F pecan wood.Very good.

I guess Timex won't mind..
2cups(large bowl) water 1/3 1/2 cup tender quick 1 cup dark brown sugar & 2 tablespoons ground black pepper. Ya just have to experiment with the tender quick I use a ziplock with all the air removed & leave in fridge 1 to 3 days. I do not wrap with bacon but sometimes lay a couple strips on top
