All this talk about what to do with bear meat got me a little excited. Here is a step by step process to one of our favorite meals to make with bear meat.
Step 1, go bear hunting, it’s fun.

Keep all the meat, it’s very good when taken care of properly. As with most game, the backstraps are damn good.

Trim them up to your liking and grab some salt, pepper, cumin, oregano and olive oil.

Next you’ll need a few oranges, a white onion, some garlic and a couple Jalapeños.

Grab your favorite, well seasoned cast iron skillet and get it smoking hot with some oil in it.

Sear your bear meat.

Throw it all in a slow cooker with a few cups of beef broth. 7 hours on high.
