Spike I've been told when more white and blue they are less "worked up" when get more red they are more "worked up" you can see a big difference in the two pictures of the doubles

Great specimens for taxidermy work. If I ever mount any more turkeys I would use these photos for realistic positions and color. You are certainly a real pro at this wildlife photography!

John, I was wondering about your source regarding the comments about head color as it pertains to the gobblers level of excitement. When a gobbler is feeding or just walking through the woods, even when it it not during the mating season, their head is almost always red. I only ever see the white/light blue color when they are worked up....although sometimes, it is red as well.

Jake - I not sure where I original heard that, just always has been something I seem to observe and heard. Been reading a few things this morning. below are a couple clips from an article that is attached. Best I can tell is red is worked up or angry. But also if bird is feeling threatened possible by the hunter.
As the turkey approached, his head was in pale shades of white and blue. These colours typically signal a relaxed bird.... the head of a wild turkey will often flush with red when they feel angry or threatened
