Don’t throw those wild turkey legs out and just eat the breasts! I soaked these in brine overnight and then cooked in the crock pot until the meat fell off the bone….mixed in BBQ sauce, honey, garlic and a little brown sugar and slapped it on a Hawaiian slider roll. Added with swiss cheese and a Wickle’s Pickle slice and baked until the cheese melted. So good!

Looks good. The wife made about 10lbs. of Turkey sausage last week from some legs we had in the freezer.
We use it lots of different ways.

No matter how long I have left those things in the crock pot they always seem to be chewy!! Educate me please. Don't like to waste meat, but don't want to wear out my jaw at a young age!

Mark, I used a cup of kosher salt to a gallon of water.
Shiloh, try the brine first overnight and then cook on LOW for as long as it takes. Those turkey legs were tender and falling off the bone in 10 hours. The brine does help!

Shiloh, mine came out chewy from my spring bird, but I did not brine over night... that may be the game changer.

Looks delicious, Jasper! I’ve been cooking mine in the crockpot till they fall off the bone, then make a big batch of stew with the meat, then put in containers and freeze for later, with what’s left after a few meals of it. I’m definitely gonna give your recipe a try. Thanks!

I love the slaw idea! Gonna try that. I’m about to make some turkey salad with another batch of meat. Like for sandwiches….mayo, slivered almonds, sliced grapes, etc. I’ll post a pic

I make BBQ out of deer/elk/antelope shanks. I like them but they do have a little bit of a stronger taste that my family is not crazy about. I was rearranging the freezer last night and found a few turkey legs and thighs Gonna give them a go this weekend.

I’ll try the brine next time. I have mostly done turkey salad and it has a good taste minus the chewy part. Maybe the brine will be a game changer for me!!

We have been cooking these for years they make a great gumbo,really good rich salad and of course soups and stews. I have never made the sandwich or the dumplings but we will thanks for sharing Lewis

I had a leg and thigh in freezer from spring, brined over night... in crock pot with chicken broth, Lipton soup mix, and half an onion. I'll be out shopping with the wife so we'll have it on low till six pm tonite, can't wait to see the difference with the brine.
I want to try it with rice, ginger, soysauce, an good Ole Frank's hot sauce!

Don't go by time. You should pick up the leg or thigh and the meat should just fall off the bone when it's done.

OK now I know what you meant by fall off the bone... 10 and a half hrs slow cook, the brine made a huge difference in tenderness. Opted for the BBQ, slaw, on small rolls... even bought some Wickles!

Lewis, I always rinse and pat the meat with a paper towel, but I'm new at this... Jasper and timeless Timex are the ones to listen to;0) scentman
