I’ve made deer, caribou, antelope and now elk. This may be the best! Thanks to my son Andrew for the glorious meat! Backwoods jalapeño seasoning and 2.5 pounds of cheddar cheese. 80/20 ground elk to beef fat. So good!
How did you cook/smoke it? What temp and how long?
I cook mine in the oven since I don’t have a smoker. Cook it on 200 degrees until the internal temp gets 160. Takes about 5 or 6 hours that way

Friend of mine shot a 5 pt bull back in the 90s sometime, can’t remember the exact date. Had it processed there and shipped back to Michigan. Processor screwed up the order and made the whole animal into summer sausage! 250 lbs of the stuff. He was giving it to everybody he knew.
Sausage looks great, summer sausage is my favorite fro wild game. Great pic Jasper!
