Austrian winter peas

I don’t have a ton of experience with winter peas, but I had a somewhat similar experience as you. The peas that I planted in Aug came back the following spring, I think due to the fact that we had some early snow that stayed on the ground the entire winter. Normally they seem to freeze out here. If I remember correctly, they grew very well and matured in the summer and died. The deer didn’t seem to browse on them very extensively in the spring/summer, probably due to an abundance of other browse. When they ripened and died, the vines created a fairly thick mat that really suppressed the weed growth until I tilled them under and planted brassicas in early Aug.
