Best Wild Turkey Recipe?
Turkey
Contributors to this thread:
I have a wild turkey thawed out. I filleted the breasts & took the legs / thighs together, all skinless. I can do oven, sous vide, or outdoor Ninja smoker oven. Let's hear what you've got. Traditional & non-traditional. I'd like something juicy & delicious. Thinking of brining first.
Thanks!
Sorry if this should be in Non-Typical. My bad! Won't happen again.
Please don't nuke me Pat! ;)
I'm following this thread...
I love bacon wrapped kabobs on the grill, personally. I'm a horrible cook. The best wild turkey I've ever had, my neighbor smoked one for me, skin on.
Breast cut into nuggets marinate in milk and pickle juice overnight dip in a egg wash dust in flour fry in peanut oil yummy legs and thighs slow cook in crockpot or pressure cooker debone pull out the tendons and use either in soups or gumbo or in gravy good dining right there Good luck Lewis
There is a whole "Recipes" forum over on the NonTypical forums...
Guess it takes a while to catch on...
I wish recipe threads would remain here. I mean we do bowhunt, kill, and cook what we kill. For the turkey, don’t overlook the oven bag. Keeps moisture in.

Here is an old thread about turkey prep. I remember it cause I made pheasant while this thread was active.
Zbone.....see my comment immediately after my initial comment. Sheesh!
Some people just gotta bitch though.
I seen your post, wasn't bitching, was just trying to explain to the posters after that this thread should be moved over to the "Recipes" forum... This topic is a perfect example that forum was created.... Sheesh!...8^)
Treat the breast like chicken breast, slice into cutlets, bread and fry, sautee for marsala, cube, marinate and grill like kebabs. Legs and thighs got in for a braise, then take the meat from the bones and tendons, and use for tacos, or open face sandwiches with gravy.
Should have kept my mouth shut,,, carry on...
Thighs & legs plus heart & gizzard go into crock pot w/ dash of liquid smoke plus salt & pepper. Cook until meat easily strips off leg tendons. Eat heart & gizzard as a special treat for yourself. Put thigh & leg meat in food processor and mince. Add mayo and sweet relish. Don't over do the mayo. Pretty good turkey salad. I cut the breast meat into 1" strips, tenderize and marinate overnight in a cup of soy sauce and brown sugar, (that's been heated to dissolve the sugar). Apply a thin coat of olive oil and grill on low heat. Enjoy.
Cut breast across the grain into approximately 1" chunks. Marinate meat overnight in Italian dressing, a little bit of dales and Worcestershire sauce. Cut up pineapple, deer sausage, bell pepper, onion and mushroom. Stick on kabobs and grill until center of chunks barely turns white. Enjoy immediately and pull the rest off the sticks and place in the fridge for snacks. I grew up on fried turkey and this is better in my opinion. If you cook it too long it will ruin it. That is the key!!
Your good Zbone....sorry I told you to get off my lawn. ;)
Thanks for the ideas so far guys!
Cover in condensed Campbell mushroom soup , add no water , put in crockpot 4 to 6 hours

I just made some turkey breakfast sausage with a bunch of turkey legs I had in the freezer. Turned out excellent. Recipe linked.
Salt brine the day before cooking. On cooking day make sure you rinse the bird thoroughly. Smother the whole bird with real mayonnaise, add choice of spices (salt, garlic powder, onion salt oregano, paprika and black pepper) to taste.
Put an apple in the body cavity to retain heat and add moisture.
Place in oven bag cook 2 1/2- 3 1/2 hours at 350-375 depending upon the size of the bird.
Will be tender (including the drumsticks), enough moisture and oils for gravy, etc.
Num can't wait til tomorrow.
As TonyBear, never had a good wild turkey until I brined it for 24 hours. There are a few brine concoctions that will work, that you can find, Search.
That sound good Tony...
All is good Nomad... I brought it up because nobody has yet to post a turkey recipe over there, I thought these recipes at Thanksgiving would have been a good for the new forum, so I just started one about how do you cook your Butterball...8^)
Spring season one of the guys here suggested brining, I tried it and oh boy what a difference.
