I was asking about pressure canning a few weeks ago. Well, I ended up purchasing one and have been testing it out. So far I have canned over 60 quart and pint jars worth of food. It started with peaches, diced tomatoes, homemade sauce, corn and stewed veggies. Than I graduated to cooked chicken. I cook pounds of chicken each week for my dog. The amount of space her chicken takes up in the freezer is staggering. So I precooked fifteen pounds of the stuff and pressure canned. Now all the cooked chicken lives in the basement, on a shelf. I keep tasting each batch when I open it up and it is great. Amazing. Most recently I pressure canned chili and last night I did 8 pounds of pulled pork.
I am certain at this point that canning deer meat to be used in our stews, chilis, etc., will be perfect. So far any of the meats I have canned have been "cheap" meats. They all have ended up super tender. I have been trying to find some cheap tough beef to test but nothing I have seen has been reasonably priced yet. I also want to can a batch of meatballs.
I am just tossing it out there as an alternative to freezing. Safe storage for at least a year and a half and no freezer burn. Precooked venison meals waiting to just be heated up when you come home from work. Pete

That sounds pretty cool Pete. So what does it take to get started, is it just the jars and the lobster pot? Or do you need special equipment?

Useful guide. I can remember my parents putting up well over 100 jars of various vegetables each year. May need to revisit this also. Tekoa

mrw, you need a pressure canner which is basically a large pressure cooker with the ability to regulate pressure. Then just the jars and Tekoa's link.

Yup same here on the parent thing. That picture reminds me of our basement as a kid. I think canning might have been a bigger thing back then due to Cold War fears. Very useful, we do a little canning now ourselves too.

Pete that’s awesome!!! I have had canned venison before and it is damn good. With all the preset stands you have and the canning down. I will be interested to see what becomes of the hooved creatures that will fall to your arrow this year. Please keep us posted this is interesting!!!!
