Nice find Art. Though those look a bit mature for my taste, and are those bug holes or something else?
I like to get them when the outer edges are still round, fat, and puffy. About 2/3 to 3/4 grown. That's when they seem most tender. I haven't shroom hunted since the chants were up. I'm about due to get back out there. Won't be long until the Maitake are growing. Maybe I'll find time this weekend.
Timing depends on several factors, but I checked my notes and I first found sheepshead on Sept 23 last year, if that helps anyone.

There is another log laying nearby that has much younger fruit on them. Going to make another run to get some more. These were pretty tender. Had to borrow a knife from Dale, Perry. I can't help it if he doesn't trust me. It was across the creek where Dan and I moved the big log off the trail.

Hi Bill. Sulfurs aren't my favorite either. They have a strong flavor. I was ok with them until my wife made lasagna with them in place of ALL the noodles. It would have been ok if she had just added some to the dish, but it was just too much, and afterwards I kind of lost my taste for them.
Other than a few stragglers, Chanterelles are mostly done here for me. It was an average year and I put several gallon size bags of them in the freezer. They're probably my favorite to hunt and eat... along with morels.

Be on the lookout for these! They are called "Old Man of the Woods" mushrooms. They are mostly black, and look like crumbled Oreo cookies on top. When you slice them, the flesh will turn red. Saute them with butter, garlic, and onion....pile them on top of a plate of deer chops, and you'll never want to eat another mushroom again! I don't believe they have any poisonous look alikes, but always do proper research before eating any wild mushroom! Delicious!

Chicken of the Woods, Oysters, & King Trumpets. It was a good week last week. Cauliflower, peppeers, & venison loaf.
Josh, I agree, Old Man of the Woods are good and unique enough that they made it onto my 'safe list' a few years ago.

Went looking for sheepshead this morning. Checked five proven spots. Nothing yet. Nice cool morning to be in the woods though. No ticks. Acorns are dropping. Very little deer sign. Squirrels everywhere!
Came home and put a big pot of venison/sheepshead chili on the stove.

Well I guess it is what it is. I ran up to the store for a few more ingredients and they were closed... and I was just there an hour or two ago. Oh well, life in the tiny city I guess. Good thing I have some chili type stuff dehydrated in the pantry ;^)

Just set down with a bowl. This is the best chili I ever ate by a considerable margin. Got a little chili euphoria goin' on here right now. Just/almost enough heat(I like hot stuff) and flavor out the Ying Yang. Got me a new recipe for the archives.

All my deer chili 'meat' is ground up stuff the local deer processor throws out. He gives me any scraps, bones, and sinew I want. Literally wheelbarrow loads of it. Makes great chili. Anyone with a lick of sense knows you can't kill a deer with a wooden bow carved from a tree with any regularity. Mere child's toys compared to your Real Bowz. (huge eye roll). Seriously, it actually doesn't seem that hard. I don't always fill all of my tags, but there have been years when I have, each and every one with a selfbow, in bow season. Try it sometime. Let's see what ya got, ladies. I'll wait, and we'll finish this conversation then.
Bob, I checked some other spots today. Found some sulfurs that were too far gone, and one tiny baby sheepshead at one of my early spots... the size of my thumb nail maybe. Seems aweful dry out there.
Jeff, the sulfur I picked yesterday was solid yellow with no orange at all. First of that color phase for me.
Yeah, that's different. What type of tree was it growing on? I'd be skeptical of that one. I've seen those that seemed off color but otherwise looked proper and fresh, and just let them be. When it comes to shrooms, I tend to err on the side of caution. I'll check my books.

the log had no bark on it at all. Oaks and ash all around. Found this 20 yards away last Friday
It looks like sulfur shelf. I never found them solid yellow before, and didn't find it in my books, but there are numerous pictures of solid yellow ones on the web. That's cool looking.
