Is this sulfur shelf/chicken of the woods? If it is, I assume it is older and past it's prime

That's what it is alright, but I don't eat them when they're that old. Too far gone for me. The younger ones are more tender and palatable. Look for the outer margins to be rounded, smooth, and puffy... and obviously still growing... about 2/3 grown. Yum.

Take a tier and flip em over. Look for worm holes. Like Jeff, these get a pass from me. But location gets noted for future reference. :)

Yeah, sulfurs aren't as confined or predictable in their timing or 'growing season' as many other types are. But the next week or two is prime time.
I look for that outer margin to resemble a puffy set of lips, the puffier the better ;^) You can also do the bend test... see how far it can be bent before it cracks.

Justin, bending without cracking or breaking is good. It means it hasn't gotten dried out and woody yet. You can bend it an inch or two from the outer edge, it should bend at least 45 degrees without cracking. If it's good there, I bend it back farther, about the middle and see what happens. Some folks will cut off the hard parts, usually it gets hard near the base first, but if you get them younger, the whole thing is nice and soft.
Bob, that looks really good. I'd love to have that recipe if you don't mind. Loves me some hot sausage.

I picked about 20 lbs of sheepshead today.

Uh oh. I picked at least 40 lbs today, and left some to grow.... and that tree grows em BIG. I'll go back in 4 or 5 days. I thought this year was going to be a bust for sheepshead, but it's looking just fine now. I have days of mushroom 'butchering' ahead of me. Gonna have to fire up the dehydrator.
Found a good place to hunt by that ancient white oak too. Good deer sign. Me and that tree have over 40 years of history. I can't wait to hunt there. I'll be able to watch the beavers work from where I'll hunt.
