Started today also, might be a few days behind but that’s ok with me. Don’t want to do this for more than a few days anyway. Started cooking down about 30 gallons this morning. Next few days should be good.

I don't go crazy either. 3 gallons is enough. All the kids and grandkids get a jar. Then wife adds strawberries to some of it and re-boils it . Yummy stuff. Lots of work involved. 1st batch today was nice and clear, my private reserve. like a fine whiskey. :)

Tapped 100 trees on Wednesday, cooked Saturday and 1/2 a day on Sunday. It is running pretty good, should explode soon. Monroe County.

Just finished the blueberry and strawberry syrup today. All done now. 1/2 pint shy of 5 gallons. Now its walleye time.
