Does anyone know if your able to use 64G card in a Stealth camera that calls for a 32G card??

You might be able to. The only thing I know is you may only get 32G of storage. Something about how the storage registers work so they only partition to 32G instead of 64G. Also if it calls for a class 10 card it won't write to a class 2 card because the class 2 won't write the data fast enough. So make sure you use the correct class card as well.
