I figured it’s time to start a new one seeing its 2023. I’m super excited for my dinner tonight, hopefully it looks like something huntski creates and it’s picture worthy! Being Sunday I’m sure you guys will add to this one today too!

Venison osso bucco bolognese style over pasta.
Venison blackstrap medallions served with pumpkin ricotta ravioli. Topped with a mushroom and spinach white wine cream sauce. Sprinkled with Aleppo pepper and crumbled bacon(from pigs my friend raised. Glass of Pinot to pair. Best meal I’ve ever cooked!

Really was amazing, too funny that the only white wine we had happened to be Josh cellars.

Ha no worries Huntski. MRW it was the wine I cooked with, can’t let it go to waste! And it paired surprisingly well. Believe me I’m definitely a red wine guy, Malbec is my go to, but I’d suggest a Pinot Grigio with this meal anytime.
We just made venison Babbacoa (spelling ?) from boned shank and it is delicious. Cooked for hours in the crock pot, recipe obtained online and should pair well with a red wine from the Rhone Valley . No more shanks in the grind pot for me. Many have said shank dishes are good but this is our first try and they were right.
O M G ! As you may or may not know I don't enjoy cooking. I'm not good at it. Anyway. Took out some backstraps and cut them into whatever that word is dajangos whatever. Threw them in some apple barbecue sauce that was in the fridge let them swim for 30hrs or so. I just cooked m low and slow and I might start cooking for a living now. Spoon good ! No pepper no salt. Just deliciousness
I cannot recommend canned venison enough. Take the toughest cuts and turns it into tender deer goodness. This one has peppers, onions,broccoli, pineapple and ginger. Served over farro. Best part, it takes ten minutes to make.
Backstraps, rare. Fried cauliflower. Sesame soy sarachi dipping sauce with a touch of mayo.

People are slacking around here! Where’s all the food! Venison tenderloins with salad. My daughter ate one herself and my wife and I had to split the other. I wish deer had a few of these lol. How my friend had these in his freezer still is mind blowing, what a great friend to share though!
Whitefish, seared in olive oil, then sautéed in butter with a bunch of spices. Pulled the fish. Added white wine and sour cream to the butter for a sauce. Deadly good. Whitefish can compete with the best of them. And nobody here wants to catch them.

Came out awesome but the tortillas were too thick. I think I needed a wetter dough. Damn..... gonna have to make them again. The ground venison we made is awesome. I have about 25% fat mixed in. I think we still have at least 50 pounds of it left. I've been trying out the Meatchurch spices. I really like them.

Venison meatloaf. I’ve tried this a few times with limited success this one came out great. Held together well and not dry at all.

Couple eggs, ketchup, mustard, panko,onion,mushrooms, peppers, with 2 lbs ground venison beef fat burger. Sandwiches for a week!
Based on a recipe I saw I added a small fennel bulb which turned out to be a nice addition
Tried a new meatloaf recipe tonight, “Cracker Barrel Meatloaf” interesting with diced peppers, onions, crushed Ritz Crackers, shredded sharp cheese….. (of course I substituted venison burger mixed with some pork) tasted great! Roasted sliced potatoes with the meatloaf, sautéed spinach with garlic, and sliced tomato with Mozzarella, paired with a nice Cabernet.
Always liked the Taco Soup in a Mexican restaurant, found a recipe that came out good using ground venison. Mixed up some Winter Sangria to go with it.

Before pic of my first attempt at a whole braised front venison shoulder. One of the deer I shot last year was on the smaller side so I decided to try this out. I will never waste my time deboning and grinding a front shoulder again !!! Just lop it off and remove the shanks for osso bucco. Now I have two different meals and So easy to prepare. The main thing that deters me from shooting more deer is having to butcher them myself. Now that I can do this I am going to have a hard time passing the amount of deer that I do during the season
Dth, I agree! Osso bucco is incredible. And so much you can do with shoulder. Is that the blade meat? The blade is supposed to be incredible.
I even saved the caul fat this year!

I've started making crackers. So far just a salt and sesame one and a cinnamon sugar one. Fresh batch of both right here. It's taken a few tries to get it the right thinness and the perfect crunch, but I think I'm there.
I went down this rabbit hole for two reasons. First, I'm eating so many natural things now and our bodies seem happier for it. No preservatives or hard to pronounce chemicals in anything we eat for the most part at this juncture. We make our own pastas and breads, so this just made sense. And secondly, price. Food is so expensive, especially crackers and chips. These crackers probably cost me 25 cents, and it is fun and takes no time to make.
And I'm learning fermenting and pickling. Kimchi and pickled lemons. Kimchi should be ready in a few more days. Lemons are a month away.
Way to go on the kimchi. Super simple and so satisfying and versatile!!!

Smoked spiral ham with a spucy rub. It will get finished off with a glaze made from mom's pear jam, bourbon, pepper jelly, honey and brown sugar.
I don’t even like deviled/hard boiled eggs and those looks fantastic Pete! As does the Ham!!!!

Having the time to do these things certainly makes it easier and much more fun. But there is something nice about cooking things from scratch. I have a loaf of bread, crackers, kimchi and pickled lemons in the works right here on the counter. Also a small portion of bacon fat waiting to be used to sear the venison backstraps for dinner.
But what hit me the most about this pic is that I just realized my wife and I eat nothing processed anymore. It wasn't the plan, it just happened.
This year we plan to grow vegetables. We have done it before but living in Montana now creates some challenges, a short growing season. It will be a fun journey.
We kill our red meat. We catch our own fish. We get a half pig from a local farm. The only thing to get rid of now is store bought chicken. Those things freak me out. I think we will buy those locally too, even if the cost is double or triple.

Meateater puts out some good recipes. I have his cookbooks. Good stuff.
If you get a turkey, use his turkey breakfast sausage recipe. Great way to utilize the entire bird. I even use the breast meat now for sausage.

Seabass opened today and did well enough to make some yummy stuff. A little spicy tuna roll from tuna I caught last year with Ava ado and cucumber on the inside and mango on the top and a spicy seabass roll with mango, avocado and cucumber from the fish I caught today

All this food looks awesome! Corporate mandate that I return to the office has changed the way I spend my time! Haven’t been cooking as much as I like but this is making me rethink my time management skills.
Turkey fried rice. It’s taken me a while to get it right - lots of research at the hibachi paid off.
Venison stroganoff, pairs well with Diet Coke, and ibuprofen for dessert. Reading the back of the Hamburger Helper box paid off.

Get ready for some deliciousness this weekend fellas…. Got 6 racks of ribs goin on the smoker Monday morning… and trying to figure out a funky fancy concoction to do with some venison…maybe some stuffed venison jalapeños. Those are always yummy.
I just cut up a 4 lb venison round roast into nice thick steaks. It’s from a big Saskatchewan deer my buddy got in 2021. I’m trying a marinade I just made on the fly with all kinds of stuff. Final ingredient to the mix was a shot of Pendleton whiskey which has a nice sweet maple taste, and it’s Canadian so I figured why not pair it with a deer from up north lol. Hopefully it’s a hit!
Smoked a front shoulder the other day and what wasn’t eaten was out on this bbq pizza. I chopped the meat into manageable pieces and mixed it with over carmelized onions. Sort of made a meat jam with it and spread it on the pizza. Best one I have ever made.
Damn….ya had to move to Hawaii….the best friends make the best pizza hahahahaahah

Tenderloins plain, just grilled
9 lbs of venison meatballs. Bought a 4 lbs bone in pork butt to grind up and mix with 6 pounds of venison. I have one roast left from 3 deer last year. Going to save that for end of June to do a pastrami. Unplugged the chest freezer the other day and will use it to pack crap in for the move. T minus 41 days and counting till liftoff to Hawaii !!!
Baked stuffed whole fluke, came out great, I pretty much followed on the water's Andy Nebreski's video recipe but left the head on to cook the cheeks too
I used my electric pressure washer to scale it too hahaha, worked great!

Not a big fan of fish either, Will. But when I do eat fish, my brain sends (receives?) this signal that says “that was a good nutrition choice.” Difficult to describe, but it’s a pretty striking effect.
Of course, I then interpret the signal to mean “you’re all set,” so I go eat some potato chips.

Well, no. I like to open a big bag, eat all the potato chips but one, and then put it back in the cupboard.

Barbecue pizza on the green egg. Made with a smoked rib jam. Which consists of baby back and beef ribs smoked low and slow at 200 for 6 hrs. Mixed with caramelized onions and barbecue sauce.

Fresh bluefin poke bowl with white rice, English cucumber, mango, red onion, green onion, cilantro, fresh ginger and furikake topping. Tuna was marinated in soy sauce, red onion, ginger, sugar, sesame oil, and vinegar l. My buddy caught a nice spinning rod tuna yesterday with a rod I built him so he hooked me up with some toro and top loin

No pics but venison meat loaf was a huge hit , I never got any of the 2lbs I made! Just ran 17 lbs of willies jalapeño snack sticks they are yummy! My 100 investment in a good used grinder and the waltons stuffer make quick work of sticks or sausages. Not me nice ! I too like the 70-30 mix

The Harvest looks good! Just had som Jersey corn that was delicious. So my wife tells son and daughter in law to come get some corn before it gets cold, so they finally come and grab an ear and start munching. Daughter-in-law says It’s really juicey should I move over? I don’t want to get any on you. Lol wife later discovers that they both ate the uncooked ears that were on counter! Haha my son HATES corn but was being polite , guess I know why now!

Take a roast and cut it into thick steaks. Bbq. It was awesome. S&P, onion and garlic powder, oil, fresh lemon juice. I let it sit in that on the counter for 90 minutes then grilled it.

Forgot to take a pic. But tonight it was muley backstraps rare, tomatoes and peppers from the garden, homemade pickles, locally sourced roasted chili peppers and homemade bread. That did not suck.
There’s a great Anthony bourdain episode when he’s ice fishing and they’re grilling fois grois or something and he says “no one in the world is eating better than us right now.” Some of those shows were really good.

I friend gave us some hominy from Mexico so I’m making wild turkey pozole/ posole. You take a bunch of veggies and cook them, purée, and make a sort of soup with this hominy and turkey. The taste is good- I’m not sold on the texture of this corn though. It’s been soaking for three days and simmering for 4 hours.

Venison Burgers - for the first time my youngest really liked them. Added lots of seasoning and some cut up salami for fat and flavor. Also- garden veggies.

Venison burger omelet ,with onion, Peppers and cheese. Gone too fast for the camera to catch the image.
Started down this rabbit hole a few weeks ago. Getting flavor, a good crust and strong gluten development (the holes) has been tricky. I think part of it had to do with the elevation I live at and the lack of humidity. But this one came out pretty darn good. This batch was made using my sourdough starter.
Oh forgot to mention.. this a French baguette.
Slow Cooked up some of my venison sausage links with mushrooms pinions reduced in Marsha with a tablespoon of peace preserve at the end. Cut it up in 3/4 pieces with toothpicks....... gone in a flash. Went through a buch of. Venison this past year and concluded that the more ways i prepare it , the more it will eaten !! Lol veni burger, sausages and sticks have chewed up almost all my roasts and backstraps. Soon there will be fresh Meat!
